Cod with Lemon and Parsley


2 Cod Fillets Approx 175g each
seasoned flour
1 lemon
25g butter
1 heaped tablespoon chopped parsley
new potatoes and greens or runner beans to serve

Frying Pan
Chopping board for putting the flour over the fish
Bowl for the flour
Cup for the lemon juice
Spatula or fish slice

1. Coat the cod in the flour, dusting off any excess
2. Squeeze the juice from the lemon into a cup
3. Heat half the butter in the frying pan
4. When it is bubbling add the fish and cook over a fairly high heat for 4-5 minutes
5. Using a Spatula or fish slice carefully turn the fish over and brown the other side.
6. When the fish is just cooked, the flesh will become opaque and start to flake add the rest of the butter to the pan
7. Stir in the parsley
8. Serve with the new potatoes or runner beans
