Nutty Granola

Ingredients (It’s always slightly different depending on what nuts and seeds are in the cupboard)

500g Organic oats
Healthy knob of butter
Bag of mixed nuts (for convenience, you can use whatever nuts really. I sometimes top it up with cashews or pecans)
Teaspoon of vanilla bean paste
Ginger
Desiccated coconut
Seeds (today I used sesame, linseed, poppy and sunflower)

Utensils

Big bowl
Baking tray
Grater
Saucepan
Airtight container
Butter knife
Wooden spoon for stirring

I find soaking the nuts for a few hours before hand (overnight) makes it easier to eat first thing in the morning.

• Preheat oven to 160C
• Melt the butter in a pan
• When it’s melted mix it with the oats in a big bowl
• Put the mixture on a baking tray and stick in the oven for 10 minutes
• After 10 minutes give it a stir so the oats at the edge don’t burn and put it back for another 10 minutes
• In the meantime, chop up the nuts
• The next time the oats come out, add the nuts, grate the ginger over the top and add the vanilla. Sprinkle the coconut and seeds over as well. Give it all a stir and put back in the oven for another 20 – 25 minutes, stirring every 10.
• When it’s finished cooking, take it out and allow to cool down. If you keep it in an airtight container in the fridge should be good for up to a week. It’s nice with fruit and Greek yogurt or coconut milk
