Roast Veg and Cous Cous

Veg (Onions and Peppers are good) I try to have a at least 5 different types of veg

1 Cup of Cous Cous

Splash of oil

Veg Stock

Baking tray
Chopping board
Sharp Knife

Heat the oven to 180oC (160oC Fan)
Put a bit of the oil in the baking tray and put in the oven to heat up

Prepare the veg (try to keep them about the same size so they cook evenly)

Add all the veg to the Baking tray (it will be hot so be careful)
Put in the oven for about 30 minutes

Prepare the Cous Cous
Boil the kettle
Put the Cous Cous in the bowl
Sprinkle he Veg Stock cube on top
Add the water
Give it a stir every couple of minutes to stop it clumping together

Check the veg after 30 minutes, if it’s gone a bit burnt it’s ready if not leave it in for another 5 minutes

Add the veg to the Cous Cous and mix.
